Corn Salad

This refreshing salad is a common feature in the Mediterranean diet. The tomatoes offer antioxidant properties, which can decrease plaque buildup inside coronary arteries. Also, olive oil can decrease LDL cholesterol.

Prep Time: 10 minutes

Cook Time: 0 minutes

Ingredients:

  • 1 can of cooked corn, drained
  • 4 chicories, chopped
  • 2 tomatoes, diced
  • 1 small onion, finely chopped
  • 1 garlic clove
  • 2 tablespoons of extra virgin olive oil
  • lemon juice (1-2 teaspoons or to taste)

Preparation:

Place corn, chicories, tomatoes and onion in a bowl. Toss it. In a mortar, crush the garlic. Add the oil and lemon juice slowly to the garlic. Add the mixture to the salad and toss it.
