Mediterranean Style Fish

Omega-3 fatty acids have many beneficial effects for the heart. This dish uses the heart-healthy cooking techniques of the Mediterranean diet with fish, an excellent source of omega-3s.

Prep Time: 35 minutes

Cook Time: 30 minutes

Ingredients:

  • 1 lb hake or any white fish
  • 1 lb potatoes
  • 1 onion, finely chopped
  • 2 red peppers, finely chopped
  • 4 ripe tomatoes, peeled and chopped
  • 2 garlic cloves, crushed
  • 4 tablespoons extra virgin olive oil
  • 2 cups water
  • Paprika
  • salt (optional)

Preparation:

  • Peel potatoes and cut them in chunky pieces.
  • In a skillet, heat olive oil over medium heat. Add onion, peppers and garlic.
  • Before brown, add potatoes. Stir.
  • Add paprika. Stir.
  • Add tomatoes and two cups of water. Let it cook for 20 minutes.
  • Add fish, and let it cook for 10 more minutes.
  • Serve hot.

Heart Healthy Ingredient: Fish

Fish is rich in omega-3 oils, a type of fat our body needs but manufactures in only small amounts.

Omega-3 oils can:

  • Decrease triglyceride levels
  • Reduce the formation of blood clots, decreasing the risk of blockage of the arteries
  • Reduce inflammation of blood vessels
  • Dilate blood vessels which helps lower blood pressure
