Tomato Sauce: A Healthy-Heart Recipe

Tomatoes are a staple dish of the Mediterranean diet. These delicious fruits (often also called vegetables) have antioxidant properties which can prevent the build-up of plaque on coronary arteries.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 pounds ripe tomatoes, peeled and chopped (see tip, below)
  • 2 to 3 tablespoons extra virgin olive oil
  • Thyme
  • Rosemary
  • Oregano
  • 1 bay leaf
  • Black pepper
  • A pinch of sugar

Preparation:

Heat the oil in a frying pan and add the tomatoes with the rest of the ingredients. Simmer until the water from the tomatoes evaporates. Adding a pinch of sugar to tomatoes while cooking enhances the flavor. This sauce can be used with spaghetti, steamed rice, vegetables, or meat.

An easy way to peel fresh tomatoes

Bring a large pot of water to a boil. Drop the tomatoes into the water for 10 to 15 seconds and remove them. Place them in a bowl or sink filled with cold water to cool them down. Cut an “X” through the skin of each tomato and it will easily slip off.

If pressed for time, you can use canned tomatoes but you must check the sodium content listed on the can. Buy either low sodium (140 milligrams or less) or “no salt added.”
